NOTES:

I made these for Purim 2005. The dough's a little sweet for my taste -- maybe less sugar next time? Almost 2 cups is a lot!

Maybe try next time with some oil instead of all margarine -- they got a bit crunchy, like a cookie, instead of staying soft like pastry.

Other than that, though, they're great, and super-successfully veganized!


Yield: About 24

  • 4 C unbleached all-purpose flour
  • 4.75 t baking powder
  • 1/4 t salt
  • 1 C margarine, at room temperature
  • 1.75 C granulated sugar
  • 1/2 C water
  • 2 t vanilla extract

In a large bowl, with a mixer set on medium speed, beat flour, baking powder, salt, margarine, sugar, water, and vanilla. Add a small amount of water if necessary to smooth (I added about 1/4 cup more water).

Chill overnight.

Preheat oven to 375F. Lightly grease 2 cookie sheets.

Roll out dough to 1/4" thickness. Cut out 3" circles with cookie cutters.

Place spoonfuls of desired filling into center of each circle and fold into triangular shape.

Bake for 10 minutes or until slightly browned. Remove from pans and cool on wire racks. Baking time may vary depending on your oven.
