waffles

Made these for lunch at work on Thursday, 24 July 2003, and ate topped with butter, Joanne's Canadian maple syrup, and some cinnamon at the suggestion of Cadelba. This is why I love my workplace -- waffles for lunch! And they were amazing, and they involve no buttermilk.

  • 1.75 C all-purpose flour
  • 1 T baking powder
  • 1 T sugar
  • 1/2 t salt
  • 3 large eggs, well beaten
  • 8 T butter
  • 1.5 C milk

Mix the dry together; whisk the wet together. Make a well in the dry and add the wet. Gently whisk them together with a few switft strokes. (The batter should have a pebbled look, similar to a muffin batter.) [But ours didn't -- it was totally smooth, probably overmixed, and wonderful.] Fold in whatever you want -- we did nothing, but the Joy suggests raisins, blueberries, raspberries, nuts, bananas, cheese, coconut, or grated semisweet chocolate.

Make on waffle iron. Yum.
