Savarin
1 package yeast
1/2 c warm water
1 1/2 c flour
2 eggs
1/2 c lukewarm milk
8 tbsp cold butter
1 tbsp sugar
1/2 tsp salt
Whipped cream, rum syrup (1c sugar boiled with 1c water, 3 tbsp rum)
Dissolve yeast in water, 5 min. Put flour in a bowl, add yeast, eggs, and 1/4 c of the milk. Mix, using hands, until mixture is smooth. Stir in a little more of the milk, as much as is necessary to make the mixture soft. Cover the dough, and let rise for about 45 minutes. Work the butter until it is malleable but not melted. Punch the dough down and work in the butter, sugar, and salt. Grease a ring mold (or a 9-inch round pan) put the dough in, and allow to rise until it reaches the edge of the pan. Heat oven to 425, and bake 15-20 minutes. Cool and turn out of pan. Cover with whipped cream and syrup.
When I made this savarin for a Trivial Pursuit party ( which turned into a sort of bacchanalia) I used kahlua instead of rum because nobody had any rum and kahlua tastes better anyway. It was gone in two seconds.
