white beans in olive oil

pretty simple, really, but that is the philosophy of much italian cooking. heat the beans, add olive oil, salt and perhaps an herb or two. you could probably introduce some tomato broth for added taste, but the beans and oil are real good just hangin' together.

i first had this while visiting friends in italy and trying to determine the local specialty of florence. apparently toscany has good white beans, and hey, it's italy, so the olive oil is great too.
